pumpkin cookies

i made these last night. Enjoying one right now and thought i would share

cream together
1/2 cup earth balance
3/4 cup brown turbinado sugar
then added one cup of roasted pumpkin puree
mixed up 2 tbsp flax seed meal w/ 6 tbsp water and whisked till frothy and added it to the pumpkin mix and added 2 tsp vanilla.

in a separate bowl went:
1 and 1/2 cup whole wheat pastry flour
1 and 1/4 cup oats
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp allspice
1/2 tsp nutmeg
dash sea salt
dash cloves

baked at 375 for 12 minutes

    These would be great for a Halloween or Thanksgiving treat too! I'm not sure what all the ingredients are...but they sound healthy.

      Philip, they sound great! Do you roast and puree your own pumpkin or skip that step and purchase it that way somewhere (and if so, what brand and perhaps what store did you find it). Thanks!

        of course i roast and puree my own pumpkin. It is a very simple task.
        Good food does not come out of a can!

          So I guess you may have to use canned this time of year (spring) because fresh pumpkin isn't around.

            or wait till fall and make it when it is in season.
            i LOVE pumpkin and have a huge repetoire of pumpkin dishes but they are strictly fall dishes in my kitchen and for my business
