You have a nice variety there Subb! I use to do about 10 different kinds but had to cut back as I ended up with too many leftovers and I didn't want my husband or me eating too many cookies. I absolutely love baking cookies too! I have trouble with gingerbread houses, but I know some people adore assembling them.

I would love a gingerbread house plan, if anyone can direct me, and a good structure recipe.

        what I'm shooting for making:
        chocolate rice shortbread
eggless and butterless chocolate fudge cookies
        white chocolate pistachio cranberry biscotti
        butter pecan tarts
        caramel
        hot chocolate kits
        homemade marshmello's
        espresso meringues
        vanilla crescents
        soft ginger cookies
        sugar cutout's

mmm can you share your marshmallow recipe?

as far as ginerbread goes, i use the recipe out of the Joy of Cooking. I use graph paper and just draw out a template i like then bake two of each design for each house. One thing I started doing a few years back that i like is putting them together with melted sugar instead of royal icing. You wait until it is at the hard ball stage on the candy thermometer and then just dip a side in and stick it to another piece. hold it for a few seconds and it's stuck for good. they are much more stucturally sound and you don't have to worry about the house falling apart while the kiddo is decorating it.

i give them away as gifts. it was something i started years ago when i couldn't afford to give everyone something nice. now, even though i'm well-equipped to purchase nice gifts for my friends and family, everyone always wants to know if they're still onthe cookie list. i also freeze them as soon as they're done and then only have a few when i'm making up the plates.

so by Dec 26th they'll all be gone.

<<I have trouble with gingerbread houses, but I know some people adore assembling them>> i don't like assembling them at all bu tmy son loves decorating them so i do it out of love.

I've made the dough so far for:
-Vanilla & Mexican Chocolate Striped Sugar cookies,
    -Molasses Cookies,
-Honey Cardamom Cutouts (recipe in November Fine Cooking).

I usually bake them off and decorate them throughout the season because I don't want the cookies sitting around too long.
