Is there a trick to making pb cookies? These seem to be the hardest cookies to perfect. Not enough time and they're way too soft, 45 seconds longer in the oven and they're dried out. Any suggestions? I had the same problem with both a pure peanut butter cookie ( the original with the crisscross on top) and a pb cookie with chocolate chunks and peanuts on top. Any ideas, words of advice would be greatly appreciated!

Mon, May 22, 2006 - 8:01 PMI don't know of any tricks to making them. I guess all the oil in them (from the peanut butter) does make them kind of tricky, but I still eat the results! If they come out kind of dry, you might put them in a container with a piece of bread, that tends to give cookies a little needed moisture. Just make sure to move the bread amongst the cookies every few hours, or you'll end up with a few really moist ones, and the others still dry. -

Sun, June 11, 2006 - 11:50 AMI never had too many problems with PB cookies. I would say to make sure your dough is moist and they it will hold together better after baking. Also try refrigerating the dough before baking. This works well with chocolate chip cookies too.

Also, I agree with other folks-- one must test, test, test, particularly if you're going into business.
I do have a PB cookie that has a PB cup shoved into it after baking... If you are interested, I will post the recipe. I've never tried them as I hate PB and chocolate together, but everyone else loves them. -

Furthermore, they LOVE chocolate. What am I talking about.. I love both PB and chocolate -- together!! Once the wedding cake i'm doing this weekend is history, then I'll think about cookies :)

And, here's the recipe I promised. You will need a mini-muffin pan for this recipe.
I suppose you could modify it to make larger cookies in a regular muffin pan (or even drop cookies) with regular-sized PB cups, but this recipe is designed for mini PB cups.
People love these. Well, at least people who love PB and chocolate together love these.
PEANUT BUTTER CUP COOKIES
Makes about 48 cookies
1-14 oz bag Reese's miniature peanut butter cups
1 3/4 c sifted flour
1 tsp baking soda
1/2 tsp salt
1/2 c sugar
1/2 c brown sugar
1 stick softened butter
1/2 c peanut butter
1 large egg
1/2 tsp vanilla
Beat butter with both sugars.
Add egg, peanut butter, and vanilla. Beat well.
Stir together dry ingredients and add to butter/sugar mixture.
Mix until dough forms.
Shape dough into 1" balls (about the size of small walnuts).
Drop into mini-muffin tin slots that have been sprayed with cooking oil spray.
Bake for 10 minutes at 350 degrees F.
While cookies are baking, unwrap mini peanut butter cups and refrigerate.
As soon as the cookies are baked, remove the PB cups from the frig, and push one down into the center of each cookie.
Allow to cool about 5 minutes, then carefully remove with a small knife or spatula.
Allow cookies to cool completely until chocolate is hard again. -

I've never tried the Test Kitchen website, but if i can get in there, I'll let you know and you can tell me what you want.

I like both types of peanut butter cookies. I grew up eating the softer ones first and letting the dryer ones age a day or few. Could that be the secret you are looking for? I really like peanut butter cookies, for being the best cookie after being stored a few days. -

Everyday Food's Peanut Butter Cookies
1 1/2 c crunchy PB
1 c firmly packed brown sugar
1 stick unsalted butter, room temp.
1 1/2 c all purpose flour
1 t baking powder
1 egg (lg)
Preheat your oven to 350F and line a baking sheet with parchment paper. Combine the peanut butter, brown sugar, and butter and mix well. In a separate bowl, whisk the flour and baking powder together. Add the egg to the peanut butter mixture and mix well. Then, slowly add the dry ingredients in batches until mixed so that no streaks of flour remain. Roll dough into 1" balls. (You can freeze the balls at this point for up to 3 months if you like.) Place a ball on the parchment paper, then press the tines of a fork into it to make the classic PB cookie pattern and repeat. If the fork sticks, dip it in a little flour first. Bake for 18-22 minutes until the outsides are slightly golden brown.
From looking at most PB cookie recipes, it seems the main problem is a moist to dry ingredients ratio, and incorporating the dry ingredients slowly and in batches is probably one of the best tools to combat dry cookies.

Here it is:
America's Test Kitchen Peanut Butter Cookies
1 1/2 c crunchy PB (smooth also okay--I seem to remember them using "natural" PB, but I could be wrong about that)
1 c brown sugar, firmly packed
1 stick butter, room temp.
1 1/2 c AP flour
1 t baking powder
1 egg
Preheat oven to 350 F and prepare cookie sheets with parchment or Silpat. Combine the peanut butter, brown sugar, and butter. In a separate bowl, whisk the flour and baking powder together. Once the butter mixture is well combined, add the egg. Then, slowly combine the dry ingredients in batches. Once the dry ingredients are incorporated, pinch off the dough in teaspoons and roll it into balls. Set the balls on prepared cookie sheets and mark with tines of a fork or a potato masher. Bake for 18-22 minutes, until cookies are light golden brown. (I also remember them removing them from the sheet immediately so that they wouldn't continue cooking on the hot cookie sheet.) -

Sun, March 4, 2007 - 5:49 PMAs long as we're on the subject of peanut butter and chocolate cookies -- check out Peanut Thumbprints with Chocolate Ganache Filling on p.54 of The Complete Cookie by Barry Bluestein and Keivn Morrissey. Make sure you have flattened them before doing the thumprint or the dent will disappear during baking.
